breakfast:

  • small glass oj
  • chai vanilla tea

i haven’t been much of a breakfast person lately. this morning my excuse was being full from the huge plate i had for dinner last night. i am thinking about going raw for the next few weeks, so i will be eating 4-5 times a day instead of just 2. i feel sooooo much better when i eat raw, it’s just extremely time consuming…and i don’t have a blender. anyone care to send me a vitamix? ;o)

lunch:

  • leftover squash casserole from the potluck. i seriously love this side dish. nom nom nom nom! (recipe was posted in yesterday’s blog!)

dinner:

  • tempeh helper (recipe from Appetite for Reduction cookbook) this recipe was simple and flavorful. i’ve never been a fan of tempeh, but this recipe is pretty yummy. i think i might start experimenting more with tempeh.

after dinner snack:

popcorn!
  • popcorn! i buy the kernels in a bag… i pop them in the microwave in a brown paper lunch bag for 2-3 minutes. i melt some soy free earth balance and sprinkle the popcorn with nutritional yeast, salt & garlic powder. this is my favorite popcorn combination! :O) normally i would use parma instead of  nutritional yeast, but i haven’t found any parma products here in new york.

so in addition to yummy fruits, veggies & grains, i also take a multivitamin every morning to ensure i’m giving my body all of the nutrients it needs. my favorite vitamin is country life chewable adult multi. i’ve been taking these vitamins since

1997. i’ve had a lifelong issue with swallowing pills (i know, i know) so having a chewable vitamin is very convenient for me! once upon a time the label said “vegetarian formula” and just recently in the last year, the vegetarian label is gone. i’ve looked at the ingredients over and over and haven’t found any animal products…so i *hope* it’s still safe.
