  • spaghetti squash “a la stephie”
  • roasted brussel sprouts with potato & onion
my favorite dish! spaghetti squash a la stephie

spaghetti squash a la stephie reicpe

  • spaghetti squash (i used 1/2 of one)
  • one can chickpeas, drained & rinsed
  • fresh spinach leaves
  • yellow onion, diced
  • 2 cloves garlic, minced
  • thyme, salt & pepper
  • extra virgin olive oil
  • gimme lean sausage
  • daiya (any flavor will do)
  • one tomato, chopped
  • pinch of nutritional yeast

cut the spaghetti squash in half – scoop out pulp & seeds. place in casserole dish with an inch of water. bake at 400 degrees for 45 minutes.

meanwhile, saute the onions in olive oil over medium high heat until translucent. add chickpeas and cook five minutes more. add thyme, salt, pepper & minced garlic mixing well. stir in spinach & cover. when spinach is cooked down, add tomato, dayia, gimme lean sausage and nutritional yeast.

remove spaghetti squash from oven and set aside to cool. when cool enough to handle, take a fork & scrape the squash onto each plate. top with the chickpea mixture.

eat & enjoy! nom nom nom.

i love brussel sprouts!

for the brussel sprout dish, i peeled & chopped 4 large yukon gold potatoes. wash & prepare the brussel sprouts, cutting off the ends, peeling the outer layer, and chopping in half. dice up half a yellow onion. mix all ingredients in a bowl with extra virgin olive oil, salt, pepper & any other seasoning you enjoy. spread on a baking sheet and bake at 400 for 45 minutes, stirring once.  super easy. you can cook this & the spaghetti squash at the same time! 🙂

  • handful of raw cashews

  • popcorn topped with nutritional yeast, earth balance, salt & garlic powder


so today i met with a personal trainer for a consultation. he kicked my out of shape butt. i am sore already and NOT looking forward to tomorrow. yikes! i don’t know if i’ll be able to do yoga! 😦 after our workout i did the elliptical for 10 minutes & then the treadmill for another 10 minutes. i’m EXHAUSTED and ready to veg out on the couch. i am so mad at myself for getting so out of shape… but i’m proud of myself for doing something about it.
