breakfast:

  • banana
  • french press of coffee (komodo dragon – starbucks)

lunch:

  • thomas’s everything bagel with earth balance almond butter
  • 3 slices of tomato
yummmmmm!

dinner:

easy peasy dinner
  • brown rice with peas, nutritional yeast, earth balance and gimme lean sausage. (wanted something quick & easy!)

 

crispy kale is the yummiest snack EVER!

 

 

 

 

 

 

 

snack:

  • crispy kale chips
  • granola & yogurt

i’ve made crispy kale before but it never came out right. so after a bit of online research, i decided not to purchase the bagged, already chopped kale. i washed the kale and dried it well. this is really the key to successfully making crispy kale chips! once completely dried, i tore the kale off the stem into bite size pieces. i tossed the kale in olive oil, a pinch of salt and a heaping tablespoon of nutritional yeast. mixed it well and spread out over a cookie sheet. i baked it in a preheated oven at 350 for about 16 minutes. it came out wonderful this time!!! so delicious.

exercise:

today i took it easy. i hurt allllll over so i decided to take the weekend off from the gym. i walked miyagi a few blocks, did a load of laundry, went grocery shopping and ran a few errands. so it wasn’t like i layed in bed all day!
