breakfast:

  • green smoothie (spinach, rice milk, acai powder, banana, frozen blueberries, amazing meal) great pick me up since i didn’t get much sleep. πŸ™‚

lunch:

  • leftover lasagna and tempeh balls

dinner:

  • butternut coconut rice
  • blackened tofu
  • pineapple collard greens

this was a mighty tasty meal. it was labor intensive to a degree…not the worst, but also not the quickest / easiest meal to make. i enjoyed it though. the flavor combination was excellent. i rarely make tofu as an entree so this was quite different for me….and my grandmother also enjoyed it. πŸ™‚ all recipes can be found in appetite for reduction by isa chandra moskowitz! πŸ™‚

snacks:

  • hot cocoa
  • vegan “drumstick” ice cream cone
