this week i’ve had….

chickpea salad sandwich

and i made this:

squash 'n onions with quinoa

and also this:

very veggie soup!

have you made a mock tuna sandwich yet (chickpea salad sandwich)? what are you waiting for? it’s super easy and DELICIOUS!

  • one can chickpeas
  • vegan mayo
  • relish (or pickle diced)
  • dijon mustard
  • salt / pepper

rinse / drain the chickpeas. use a potato masher to smoosh the chickpeas into a tuna like consistency. add mayo, a dash of relish & mustard, salt, pepper and if you want the fishy taste, add a bit of shredded nori (seaweed). make a sandwich (i top mine with tomato, sprouts & onion). so yummy, quick & addicting!
