breakfast:

  • remainder of leftover squash burgers

lunch:

  • chickpea salad (chickpeas, vegan mayo, kosher relish, dijon mustard, white pepper, salt)
  • club crackers + raw carrots

dinner:

lasagna roll ups
  • lasagna roll ups with tofu ricotta
  • mock meatballs

i finally got my lethargic self into the kitchen to cook. it was 90 degrees and i was sweating my butt off, but i cooked and it was sooooooo worth it. i bought a few new cookbooks last week and decided to try the lasagna roll ups from vegan family meals by ann gentry. this recipe totally rocks!!!!!! my grams loved it! lasagna is always fairly labor intensive, but totally worth the extra work! i made some homemade marinara and topped the lasagna rolls with daiya mozzarella. yum yum yummy! i made the mock meatballs from the happy herbivore cookbook because they are my favorite! 🙂
