breakfast:

  • french press of coffee
  • tofu scramble – new variety (see recipe below)

Caramelized Onion & Sun Dried Tomato Tofu Scramble

  • one block extra firm tofu, drained & all liquid squished out
  • sun dried tomatoes in olive oil, chopped
  • fresh spinach
  • yellow onion (1/2 of large), chopped
  • white pepper, salt, thyme
  • earth balance or oil for pan
  • daiya mozzarella flavor
a change from my standard tofu scramble!

saute onions in olive oil (or earth balance) for about ten minutes or until brown & caramelized. crumble tofu into pan (MAKE SURE ALL LIQUID IS SQUEEZED FROM TOFU!). add sun dried tomatoes, spinach and seasonings combining well. add daiya “cheese” and cook until melted. serve with your favorite bread or bagel. 🙂

i was flipping through a few cookbooks and found a tofu scramble recipe with caramelized onions & sundried tomatoes. so i bought the ingredients for it, and then couldn’t find the recipe. so i just winged it. 😀 i have no idea what book or what other ingredients it called for…… i liked my version.

i’m really starting to LOVE vegan family dinners. such a great cookbook. i might try the lentil loaf and gluten free gravy tomorrow night. i still think about those lasagna rolls i had last week. yummmmmmmm. i think vegan family meals is a must have in every vegan cookbook library! 😀
