- 2 field roast hot dogs sauteed with onions & ketchup
not the healthiest most exciting meal, but i made real hot dogs for my grandmother. (she LOVES hot dogs) so i figured i’d use up the field roast dogs i had in the fridge. i always like to try new products. 😀 they were okay. not my favorite, but not my least favorite either.
- black bean & sweet potato enchiladas (from vegan planet)
this was a meal i made once a week during my first year of being vegan. i love this recipe so much! easy. delicious. healthy(ish). i love the combination of sweet potatoes and black beans. i normally by corn tortillas (but couldn’t find any at my grocery store) so opted for the lowest carb whole wheat tortillas that i could find (trying to keep my *diabetic* grandmothers sugar in check).
- strawberry-banana soft serve with fresh pineapple & coconut
i threw one banana into the food processor until smooth & creamy. added 4 frozen strawberries…. and then 3 chunks of fresh pineapple. blended until smooth. topped with unsweetened coconut flakes.
- popcorn with parma
i don’t buy microwave popcorn. i HATE microwaves. period. so i buy bags of kernels and use a pot to pop my popcorn. i heat a pot over medium/high heat and add olive oil. i throw one kernel in…when it pops i know it’s ready. so i add a handful of kernels to the pot, cover, and wait for the popping to slow down. turn off the heat… remove the cover when the popping stops. i add parma, salt & garlic powder. YUM. no “butter” needed since it’s popped in olive oil. 😀
i took today to rest my muscles. my body is super sore from the excessive cardio & dance. i need a massage! 😦 i’ll be back at it tomorrow. i think i’ll give myself one day a week of rest…. today was it.
