breakfast:

  • french press coffee (rice milk & vegan sugar)
  • leftover smokey tempeh, black bean burger & mashed sweet potatoes
leftovers for breakfast

lunch:

  • perfect pancakes (vegan brunch) topped with REAL maple syrup
  • banana & blueberries

sunday’s don’t count when it comes to dieting. they just don’t. you need at least one day a week to splurge. at least all my ingredients are vegan & organic, right?!? perfect pancakes from the vegan brunch cookbook topped with REAL maple syrup, blueberries and banana. grandma AND miyagi approved! 😀

dinner:

  • chickpea cutlets (veganomicon cookbook)
  • leftover sweet potato mash
  • sauteed spinach

another DELICIOUS dinner! i’ve made the chickpea cutlets before but man i LOVE them so much more this time around! wow. so lemony and delicious! i’ve never actually looked at the nutritional content of wheat gluten, and was surprised how low in carbs and high in protein it is. i’ve used it twice this week. very exciting. this meal was super quick to throw together and DELICIOUS. better than something i’d get in any random vegan restaurant. happy belly!

dessert:

  • purple plum (for some reason the dinosaur eggs have disappeared from the grocery store!) 😦

  1. I’m happy you’ve been enjoying the Veganomicon!! Today I made Snobby Joes (Yum!) and then the Vietnamese sandwiches from Veganomicon with seitan that I made from Vegan With a Vengeance. My first experience with seitan and I loved it!
