so i finally broke down and bought a panini maker. as if i need another gadget in the kitchen… i’m SUPPOSE to be saving up for a vitamix blender. 😦 so this afternoon i made summer squash soup (grandma is still having issues with solid food – so soup it is) which was DELICIOUS! and for myself,
i made the lemon pesto panini sandwich. holy out of this world! i think i might make sammies every day now! 😀 layers of roasted zucchini, roasted red bell pepper, red onion, pesto, sliced tomato, avocado and i added some daiya mozzarella to experience the melty factor. mmmmmm. nom nom. so good. panini party in my mouth. love love love. tomorrow i’m gonna make my own recipe! i really enjoyed the lemon pesto… really good. i wish my grams could eat sammies right now. i want to share these because they are SUPER good!
