today my grams wanted me to pull all the overgrown rhubarb out of the garden… and i already had 4 ziploc bags of rhubarb in the freezer, so to make some room i baked my favorite rhubarb recipe. rhubarb almond bread. (i made one loaf & a batch of muffins) recipe HERE. i cut the sugar in half.
this morning in between cleaning the house & doing laundry, i threw some brown rice in the oven & some black beans in the slow cooker. i made a recipe from the vegan slow cooker cookbook. i had some mangos that needed to be used so i made mango black beans. YUM. so good. when everything was ready to serve, i layered brown rice – then black beans – topped with salsa and tofutti sour cream. SO.FREAKING.NOM. super easy dinner.
