yummy dinner and dessert

breakfast:

  • french press coffee (coconut / vanilla creamer)
  • leftover tempeh helper

i was busy cleaning & doing laundry all day and skipped lunch…
definitely made up for it with dinner & dessert! 😀

dinner:

italian style dinner

 

  • whole wheat spaghetti with mom’s marinara (appetite for reduction)
  • black eyed pea + tempeh bean balls (appetite for reduction)
  • spaghetti squash a la stephie (onion, spaghetti squash, sauteed spinach, chickpeas, zucchini, tomato, oregano, thyme, s&p, daiya mozzarella)

 

dessert:

 

i love baking!

 

  • rustic chocolate chip banana oat cake with peanut butter glaze (oh she glows – recipe here)

my friend stacey posted a link to this recipe on my facebook wall and i’ve been dying to try it ever since… so the next trip to the grocery store i purchased extra bananas (everything else i had on hand)… i’ve just been waiting for the bananas to ripen. i know there’s a paper bag trick, but i really haven’t had time for baking up until today. so my bananas are nowhere NEAR how dark the recipe called for… but honestly… bananas with spots REALLY gross me out. 😦 so a black banana is OUT OF THE QUESTION! this is a super yummy recipe and really fairly simple. grandma gave it two thumbs up! 😉
