stephie’s mashed potato bowl

so i saw a KFC commercial recently for their famous mashed potato bowls. (i know GROSS kfc) but i was hungry & wanted something similar (minus the slaughtered chickens and lard) so i decided to create a healthier vegan version.

mashed potato ingredients:
5lb bag white potatoes
1 stick earth balance
plain rice milk
salt / pepper

i like my potatoes peeled… so i washed & peeled the potatoes, put in a large pot, covered with cold water and put over high heat. bring to a boil, cover & boil for 10-12 minutes or until potatoes are fork tender. drain water, add earth balance, rice milk, salt and pepper. mash with potato masher until all lumps are gone.

gravy ingredients:
3 cups water
2 vegan bouillon cubes
spicy mustard
1/2 cup flour
1/2 cup nutritional yeast
garlic + onion powder
sage / thyme / salt / pepper

this gravy is SUPER easy. you just put all the ingredients in a pot over medium heat & whisk until the consistency is to your liking. it’s also really easy to alter. add sauteed onions… or portabella mushrooms. whatever your vegan heart desires! 😀


remaining ingredients:
-gardein mandarin chickn (do not use sauce) or any other soy chickn product you like
-imitation bacon bits (check ingredients to make sure it’s vegan!)
-daiya cheddar cheese
-frozen corn

so i basically made the mashed potatoes, then the gravy. i sauteed the gardein chickn according to package directions but didn’t use the sauce. i ran some warm water over the frozen corn. on a plate i layered mashed potatoes, gravy, corn, daiya, bacon bits & gardein chickn.

super easy & delicious comfort food. great way to curb your cravings for nasty fast food!
