so i never realized that biscuits and gravy was a “southern” thing. i grew up in south florida… and had biscuits and gravy for breakfast almost every week. my family would go to this neighborhood diner and about 90% of the time i ordered biscuits and gravy. white peppery gravy with sausage. my favorite thing ever. most of the people i meet here in the northeast have never had biscuits and gravy…which is so weird for me! okay well now… many years later i am vegan and still crave biscuits & gravy for breakfast all the time. so here’s my go to recipe.
biscuits (almost bisquick like!)
2 cups all purpose flour
2 tsp baking powder
1/3 tsp sea salt
3 heaping tbs nutritional yeast
1 stick earth balance, softened
1 cup original rice milk (not flavored!!)
preheat oven to 450. mix the flour, baking soda, salt and nutritional yeast in a large bowl. add the softened butter and stir until the mixture becomes crumbly. then add the rice milk and stir until combined. drop the dough onto a cookie sheet in biscuit sized drops. bake for 12 minutes.
this recipe is SUPER easy and they taste AMAZING. so not healthy, but oh soooooooo good.
and no animals were harmed in making them. 😀
small yellow onion
gimme lean sausage or any vegan breakfast sausage, crumbled
1/3 cup all purpose flour
1 tbs no chicken bouillon (i use better than bouillon)
1/4 cup water (to mix the bouillon in)
1 1/2-2 cups original rice milk (or any non dairy milk)
black pepper. lots of it.
a pinch of sage
large spoonful of earth balance
so basically i melt the earth balance in a large pan. add the onion and cook until tender. add flour and mix well. add the bouillon / water mixture and combine well. add seasonings and sausage crumbles… then slowly start to add the milk, stirring well. you could also cook the onions & sausage first, and add them to the gravy after… this is just the way i do it. doesn’t mean it’s right…. but i LOVE the way my gravy tastes. serve over biscuits right out of the oven. NOM NOM NOM NOM NOM NOM. best breakfast ever. grandma loved the biscuits too! 😀
