the past few weeks have been stressful and emotional for me, which left me with almost no appetite. luckily i’m out of my winter blues funk and cooking up a storm in the kitchen. so far winter has been mild (no snow since october still) but the temperatures have been dipping down into the 20’s and 30’s. perfect time for comfort food and baking! 🙂
i LOVE meatloaf and mashed potatoes. vegan versions of course! when grandma came home from her holiday weekend, i made my favorite meatloaf recipe. i’ve been making this recipe since 2007 and it’s basically the ONLY way i’ll eat mushrooms. i know, i’m a strange non mushroom loving vegan. more for you! i like my meatloaf served with mashed potatoes (from scratch) and le sueur peas. to get rid of my leftovers i also included the squash casserole & shaved brussel sprouts. grandma LOVED this meal! 🙂 it was a wonderful way to welcome her home from her weekend away!
i’m a sucker for baking. lately i’ve been giving away most of my baked goods just because i don’t want to eat too much! (i’m TRYING to eat better!) i decided to utilize the very brown bananas on my counter so i made some banana bread! 🙂 i opted for a new recipe that i haven’t tried yet & boy was it good! from the hearty vegan meals for monster appetites cookbook “go bananas bread” recipe. so.freaking.yum. instead of making two loafs (i only have one loaf pan) i made a few muffins… grandma and i enjoyed the muffins & i’m giving the loaf away! 🙂
grandma considers hot dogs a food group. she THINKS they are healthy. so when i make her hot dogs, sometimes i buy myself veggie dogs so i don’t have to make two separate meals……. so for lunch today i made “pigs in blankets” with pillsbury crescent rolls. (NOT ALL OF THE PILLSBURY PRODUCTS ARE VEGAN – READ THE INGREDIENTS CAREFULLY) not the healthiest lunch, but i snuck some broccoli in there to get some more nutrients! 🙂
for dinner i was craving tomato soup & grilled cheese sandwiches. so that’s what i made… i tried a new recipe from my favorite new cookbook spork fed seriously love every recipe i’ve tried from this book! the tomato soup was pretty yummy! (and super easy). it went perfectly with my grilled daiya sandwich! (actually it was baked as you can see from the picture!) 😉
not the healthiest day i’ve had, but sometimes you just need comfort food to make you feel better! i’m happy to be cooking and eating again! 😀
