my delicious lunch:
i knew i was going out for dinner so i opted for a really healthy veggie filled lunch. started my salad with spinach leaves topped with cucumber, red & green bell peppers, tomatoes, avocado, carrots, sunflower seeds and chickpea salad! so good!!!!
i was invited out to dinner in nyc with my friend lauren and her awesome parents & fiance. (i just shot her engagement photos on christmas eve all over nyc!!! so exciting!!!) they told me to choose the restaurant and i chose cafe blossom because lauren lives in the area. dinner was absolutely delicious and everyone enjoyed their meals… best part… NONE OF THEM WERE VEGAN! 😀 LOVE open minded meat eaters!!!!! 😉
i had a few bites of the live nachos and caesar salad to start. sucked down a butterfinger shake. (HAD TO – they are UH mazing!!) i ordered the Lemon Peppercorn Grilled Seitan ((chive mash, sautéed garlic kale, roasted cherry tomato cream)) it was SUPER delicious! i was too full for dessert – shocker right?!?!? everyone really raved about the food. it was an overall awesome night! 😀
i haven’t mentioned this, but i haven’t had coffee on a regular basis for a few weeks now. no withdrawals!! i went 10 days without coffee and then had to drink some for a 4 hour drive (twice) during christmas weekend. so i’ve been taking in a lot less sugar than normal. and giving away more than half of my baked goods. (yay me!) and for the first time in a LONG LONG time… i’m weighing 138. woo hoo! 8 more pounds to lose and i’ll be at my goal weight! yippee!
