adios 2011.

breakfast:

  • black bean tofu scramble (tofu with chili powder / cumin rub, black beans, cheddar daiya, green & red bell peppers, avocado, salsa, sour cream, cilantro, red onion)

i didn’t have any zucchini on hand *GASP* so i opted for a southwest type scramble. it was SUPER good!

lunch:

  • chickpea melt on rye with cheddar & mozzarella daiya

i’m in love with chickpea melts. it’s not surprising since i was addicted to tuna melts as a meat eater.

YUMMMMMMMY!!!

 

dinner:

this was a simple and delicious dinner. i’m a sucker for any noodle dish that includes peanut butter! mmmm! next time i make it i think i’ll add more veggies! carrots weren’t enough!
