very vegan easter weekend

i decided not to do anything elaborate for easter since i don’t really celebrate it. i had the kitchen to myself, but was busy packing moving boxes all weekend. so nothing crazy, but here are the highlights of my easter weekend eats.

i’ve been trying to use up what’s in the cabinets & freezer the past few weeks… so i made some rhubarb muffins to get rid of the many bags of rhubarb we have from grandma’s garden! everyone who had one raved about them. normally i use almonds but didn’t have any so i substituted walnuts. you can find the recipe here.

i cheated and ordered sushi because i was so tired and not in the mood to slave away in the kitchen… and then have to do dishes. i love sushi. and i love that i can call and have it delivered! i felt kinda bad that there were 3 sets of chopsticks in my order… when all of this sushi was for me! of course i shared a few pieces with miyagi! πŸ˜‰

i swear i need to seek professional help for my chickpea melt addiction. i can’t stop making / eating them! nommmmmmm.

since sunday was easter i decided to make myself some pancakes. the raspberry chocolate chip variety. πŸ˜‰ my favorite. they were delish!

i drank a lot of green smoothies the past few days as well… not a very exciting food weekend, but what can i say? hope everyone had a super happy holiday weekend! πŸ™‚
