tonight i cooked dinner

hello my name is stephanie… and i’m addicted to chickpeas. which is sort of hilarious considering i HATED them when i was younger. i remember my mom use to top all of her salads with chickpeas and i’d gag. so gross. WRONG ANSWER. so glad my taste buds have evolved over the years. i’m still working on mushrooms, olives, melon & licorice. (ick) so for dinner tonight i decided to try a new recipe in dreena burton’s newest cookbook “let them eat vegan“. the recipe i chose was chickpea artichoke bliss – and it was just that. bliss. yukon gold potatoes, artichoke hearts, chickpeas, red bell pepper and lots of seasonings. so delish! it was perfect for this chilly april evening.

i’ll be trying a few other recipes from this cookbook this week. πŸ™‚ most of my cookbooks are packed up so i’ll be rotating meals from only a select few. can’t wait for leftovers tomorrow! πŸ˜‰
