i rarely make up my own recipes. this happens to be something i came up with on my own! i named it spaghetti squash a la stephie. 😉 i’ve been making it for the past few years and i love it!
1- spaghetti squash
1 can chickpeas drained & rinsed
1 TBS earth balance
daiya (mozzarella and/or cheddar)
salt, white pepper, turmeric, nutritional yeast
handful fresh spinach
1 small white onion
i cook my spaghetti squash in a pre heated oven at 375 degrees. cut the spaghetti squash in half, remove seeds and lie cut side down in a glass casserole dish with a 1/2 inch of water. cook for about 45 minutes. carefully remove from oven and hold each half (with oven mitt or towel) and scrape squash with a fork onto a plate.
while spaghetti squash is cooking, melt earth balance butter in large saute pan. cook onion until tender. add chopped zucchini, tomato, chickpeas & spinach. when veggies are tender add spices and daiya shreds! add spaghetti squash to pan and mix well.
easy, delicious & fairly healthy side dish or dinner. 😀
