- chickpea melts on rye bread
my good pal lauren practically begged me to make chickpea melts. so tonight for our grey’s anatomy date i brought some chickpea salad (pre made at my house) with all the ingredients to make the melts. lauren definitely approved. i love converting my omni friends into vegan food lovers! makes my vegan heart so happy!
1 can chickpeas (drained & rinsed)
relish or chopped pickle
finely chopped celery
salt & pepper
bread of your choice – i prefer rye!
to make the chickpea salad, place chickpeas in a bowl & mash with a fork or potato masher. add veggies & spices. anything you would put in your tuna salad will work. mix well.
i heated the oven to 350 degrees, topped some rye bread with daiya shreds and baked for about 10 minutes (or until melty). top with tomato & chickpea salad. i like mine open face because it think it’s easier to eat that way. 😉
