dinner for two!

tonight i made dinner for my (very not vegan) mom! in my quest to avoid all things soy i chose chickpea cutlets with mushroom gravy (both recipes can be found in the veganomicon cookbook!). i also made roasted asparagus & cheesy cauliflower mash! yum! mom didn’t freak out about it but she said she liked the cauliflower and the gravy. ah well. can’t win them all.

dinner !! !! !!

 

cheesy cauliflower mash
1 head cauliflower
earth balance
non dairy milk
nutritional yeast
salt & white pepper
cheddar daiya shreds

i basically just boil the cauliflower until tender enough to mash. i drain the water from the cauliflower, mash the ish out of the cauliflower, adding a spoonful of earth balance, palm full of nutritional yeast, salt, pepper & a splash of non dairy milk. the same way you’d make mashed potatoes basically but minus the potatoes. i add the daiya at the end and let it get all melty. super yummy and delicious!
