om nom nom kinda day!

my morning started out with a french press of coffee. i had one cup and then headed to the local park for a 2 mile run/walk. for whatever reason coffee helps me workout. i breathe easier. i did the 2 miles in 25 minutes. not terrible for my first time back in my running shoes! it’s been many months since my last run! april maybe? ugh! i wasn’t hungry for breakfast today. coffee does that to me sometimes. either i have to eat BEFORE i drink the coffee, or breakfast is skipped.

lunch:

  • buffalo chick-un salad

spinach leaves topped with chopped celery, green bell pepper, tomato wedges, cucumber slices & gardein buffalo wings. soy bleu cheese crumbles and topped off with my delicious homemade vegan bleu cheese dressing. my salad was HUGE and i ate every delicious bite! YUMMMMMMM.

i knowwwwwww i’m suppose to be taking it easy on the soy. but oh em gee. this salad was uh-mazing and totally worth cheating for.

dinner:

  • rosemary potatoes  & collard greens with vegan sausage (wild about greens cookbook)
  • tofu scramble

the recipe for the potatoes was not very descriptive on how to cook the potatoes so i basically cooked the entire meal on my own and just used the recipe for ingredients! it was delish though!

 

breakfast for dinner

tofu scramble recipe

  • one block extra firm tofu, pressed
  • spoonful of earth balance
  • one medium onion, chopped
  • one large zucchini, chopped
  • one large yellow squash, chopped,
  • hand full of fresh spinach
  • one tomato, chopped
  • handful of daiya cheddar shreds
  • turmeric, salt, pepper & nutritional yeast

i start with some earth balance in my pan – when melted add onion. cook for five or six minutes. i then add the zucchini & squash and spices. cook for 10 minutes or until squash is fork tender. next i add the tomato & spinach leaves, stirring the mixture well. crumble the tofu into the pan, stir well. top with daiya & cover until melted. serve and enjoy! i always have leftovers which is great!

mom liked both dishes. i think she liked dessert best though.

dessert:

  • tropical “ice cream”

tonight i added to the vitamix some chopped fresh mango and 2 frozen bananas. processed till smooth & then topped with shredded coconut. YUM.
