happy day in the kitchen!

yesterday i scratched one thing off of my 2012 new year resolution list. i ran my first 5k. the color run in miami. good times with a great friend! so happy i finally did it. i’m planning to run another one on thanksgiving. i love giving myself challenges i don’t even think i can complete… and then i do. my goal is to run a half marathon by 2014. we shall see.

ran my first 5k october 21, 2012

today i spent the entire morning and afternoon in the kitchen. it felt amazing. i saw some meatloaf “cupcakes” on pinterest that i wanted to make vegan. so i did that today. they came out pretty amazing. i used my standard meatloaf recipe but instead of putting in a loaf pan i used a 6 count muffin tin! i made some mashed potatoes from scratch. and topped the cupcakes with peas. holy deliciousness!

M E A T L O A F    R E C I P E

ingredients:
-portabella mushrooms or baby bellas, chopped
-one large onion, chopped
-2 carrots, chopped
-3 celery, chopped
-one block extra firm tofu
-walnuts 3/4 cup
-one package lightlife vegan ground “beef” crumbles
-brown rice (cooked) 1-1/2 cups
-flax meal 3 tbs
-sage, thyme, oregano, salt, pepper
-vegan breadcrumbs 1 cup
-ketchup

step one: saute the onions, carrots, celery in a large pan adding the sage, thyme, oregano, salt & pepper as it cooks
step two: in food processor or blender combine tofu & walnuts until smooth
step three: add in cooked veggies to tofu mixture. don’t over blend. should be chunky!
step four: heat veggie crumbles
step five: in large bowl combine veggie tofu mixture, ground “beef” crumbles, cooked brown rice and breadcrumbs – mix well
step six: put mixture into lightly oiled muffin tins – pressing down gently and glazing tops with ketchup
step seven: place in preheated oven at 350 degrees for one hour

the mashed potatoes are simple too. yukon gold potatoes boiled until fork tender. drain water. add salt, nutritional yeast, earth balance & non dairy NON VANILLA milk substitute. mash mash mash. the mashed potatoes are your cupcake frosting. if you aren’t a fan of peas (which i can’t imagine why, but i do have friends with an aversion to these sweet little things) you could use vegan bacon bits instead! super delish recipe. my mom enjoyed it! maybe i can get my dad to try it too! so far he won’t try anything i’ve made. someday i’ll make him a fan of vegan food….

i had some bananas going bad so i decided to make some banana bread. i found a really simple recipe on vegweb… RECIPE HERE. my only modifications were: cut the sugar to a 1/2 cup, added 2 tbs of flax meal to the flour mixture, 1/4 cup of almond milk to the banana mixture and some chopped pecans to the final batter. i used some cinnamon & sugar mixed with earth balance for a topping. came out wonderful. nothing like banana bread right out of the oven! mmmmmmmmm!

vegan banana bread!

this banana bread recipe was super easy! the prep time was under 10 minutes! and i got to catch some shows on DVR while it was baking! perfect. it’s almost november… i’ve already started planning my very vegan thanksgiving meal. can not wait!
