i’ve been working so much and have the most hectic schedule. i haven’t been able to put as much effort into my cooking as i normally do. i miss the kitchen. 😦 my last trip to whole foods i ended up trying a few sophie’s kitchen products and purchased a new vegetarian plus vegan ham for my holiday meal! a lot of fake / processed meat(s), but there’s not much i can do when i work every day.
sophie’s kitchen fish fillets
i made a “fish” filet sammy for dinner one night. on a whole wheat loaf with spinach and special sauce (ketchup, relish and vegan mayo). pretty delish! served with a side of green beans! the fish fillets were pretty darn tasty!
in an effort to curb my night time sweet tooth, i’ve been gorging on my soft serve banana desserts. in the vitamix: blend a frozen banana, some non dairy milk and any jams or nut butters you wish. this week i made a simple banana / vegan eggnog concoction and added vegan chocolate chips! YUM. dessert heaven!!!!!
i’ve been missing the vegetarian plus whole turkey / half chickens lately. so i decided to try their orange chicken. one of three vegetarian plus options in florida. slim pickings down here. what gives vegetarian plus?!?!?!? get your half chickens & whole turkeys down here! MEH!
i sauteed some kale, red bell peppers & carrots with the orange “chicken” until tender. totally amazing. next time i’ll serve over quinoa. i was too tired this particular night.
in my quest to try all things vegan…. i also purchased some vegan prawns also from sophie’s kitchen. these were kinda ech. rubbery. not so tasty. not my favorite. i want to try the calamari next time… if they have it! i sauteed the “prawns” in earth balance, garlic, cherry tomatoes and spinach. super easy. it was tasty. just wasn’t feeling the texture of the mock seafood tonight!
as i mentioned earlier, i’ve been working… a lot. guess where you’ll find me tomorrow evening? yup. work. so today, christmas eve i cooked my christmas dinner. mother tasted & approved.
i’ve been missing the vegetarian plus vegan half chickens / whole turkeys… and then this popped up at whole foods this week… it was better than i expected! kinda actually love it!
my side dishes for the ham were super easy! cole slaw, roasted brussel sprouts and sweet potatoes with brown sugar. NOM. everything was super tasty. this wasn’t the most festive christmas for me, as it is my first christmas in sunny south florida in over four years… i miss the snow and four seasons…. my mom was in the pool today. now maybe you can understand where i’m coming from. someday i’ll live in a place with four seasons again…
