it’s not often that i go into the kitchen without a cookbook or recipe in hand. today i made up my own quinoa veggie stuffed peppers.
2 bell peppers (i used orange & yellow)
yellow onion, chopped
cherry tomatoes, cut in half
zucchini / yellow squash, diced
salt, pepper, cumin & poultry seasoning
quinoa (rinsed & cooked according to package instructions)
daiya (cheddar or mozzarella or both)
evoo and/or earth balance
breadcrumbs (not all breadcrumbs are vegan – check the ingredients!!!)
preheat oven to 350 degrees.
in a large pan, saute the onions in olive oil or earth balance over medium heat, letting them slightly brown. add any seasonings your heart desires. i used salt, pepper & poultry seasoning. add the chopped celery, zucchini & squash, carrot and spinach and cover until veggies are tender. add tomatoes, turn off heat & cover for several more minutes.
cut the bell peppers in half lengthwise and remove seeds. put a generous serving of quinoa & cooked veggies in each pepper. melt some earth balance and mix in breadcrumbs. sprinkle breadcrumb mixture and daiya over each pepper. place in oven for 45 minutes or until peppers are fully cooked.
i had way too much veggie filling so i made a casserole out of it. i cooked it the same amount of time as the peppers in a glass casserole dish with the breadcrumbs & daiya on top! nom!
