i got a text this morning from my best friend. she needed some motivation to eat healthy next week. monday through friday smoothies & salads. movitvation? sure. let’s do a smoothie / salad challenge. drink lots of healthy green smoothies & eat healthy salads! done & done. anyone want to hop on our healthy bandwagon?
yesterday for lunch i had a pretty awesome salad. i started with a 3 bean salad i made.
3 Bean Salad Recipe
1 can red kidney beans (drained & rinsed)
1 can chickpeas (drained & rinsed)
1 can black beans (drained & rinsed)
1/2 red bell pepper (chopped)
1/2 cucumber (chopped)
2 stalks celery (chopped)
1 head broccoli florets (chopped)1 small red apple (chopped)
lemon juice, apple cider vinegar, spicy mustard, evoo, salt pepper, maple syrup (dressing)
mixed all the above ingredients and chilled in the fridge overnight. made a kale salad – massaged kale leaves with avocado topped with the 3 bean salad, cherry tomatoes & sunflower sprouts and then drizzled fresh squeezed lemon juice. no dressing needed between the 3 bean salad dressing and the mashed avocado!
we are going to ROCK this challenge. looking forward to a healthy menu next week! 😀
