smoothie / salad challenge ~ day two


breakfast: kale, 2 pears, blueberries, pineapple, cashews, frozen mango & almond milk. super delish. great way to start my morning!

morning snack: banana!

lunch: mixed greens, shredded carrots, sunflower sprouts, sunflower seeds, chickpeas, cucumber, avocado, black beans & tempeh bacon.

i went into the office to work today but cut my day in half and ended up being able to doctor my salad once i was home again. i added the avocado, black beans & tempeh bacon after the picture was taken! 😉

afternoon smoothie: kale, spinach, 2 plums, shredded carrot, green apple, coconut flakes, frozen peaches,  & coconut water. yummmmmm-o.

dinner: mixed greens, sunflower sprouts, tomato, black beans, chickpeas, edamame, chickpeas, gardein “chick-un scallopini” marinated in spicy mustard, maple syrup, vegan worchestire sauce & a splash of olive oil. super delish. my salad totally hit the spot.

after dinner i went for a short 10 mile bike ride and got to watch the moon rise on the beach. as much as i despise living in florida, i often remember at times like these that i am super lucky to live in such a beautiful place.

today i felt a lot more hungry than yesterday. hopefully i’ll make it to the store to buy some more ingredients so i am able to make some unique salads. looking forward to tomorrow’s adventure in smoothies & salads! 😉
