before i get into my day of smoothies & salads… you just have to know that my new obsession is coffee ice cubes. oh em gee! iced coffee is my new favorite thing. i think from this day forward i will always have my one hot cup of coffee and then the remainder of the french press will go over coffee ice cubes… nom nom nom.
okay back to the challenge! 😉
breakfast: kale, pineapple, banana, chia seeds, almond milk, & coconut water ice cubes
lunch: stone fruit & lentil salad (recipe from post punk kitchen) i used apricots & plums for the stone fruit. the onions were pickled overnight. this was such a delicious treat! i made one for my mom & packed one for lunch tomorrow as well!
i would have never thought to put cooked (or cold) lentils on a salad…. but this works. the fruit was sweet & the dressing tangy. perfect combination! i love isa… she’s so creative with her recipes. 🙂
dinner: last night when i was making my taco salad, i made an extra bowl for tonight’s dinner! mmmm. taco salad take two! (see yesterdays post for the recipe) just as good tonight as it was last night!
snack: kale, green grapes, pineapple, coconut flakes, mango, coconut water ice cubes & almond milk. even though i just ate dinner, i needed this smoothie. i had a photo session this afternoon from 2:30-6:00 — i was famished!
snack for the movies: banana, peanut butter, cacao powder, coconut flakes, 2 coconut water ice cubes, 2 coffee ice cubes & almond milk. it’s a chocolate / banana / peanut butter / coconut extravaganza. perfect to sneak into the movies with me! it’s been a long day and i figured i could use the 2 coffee cubes!
i have a predicament. tomorrow i have dinner plans at sublime. to my knowledge they do not have smoothies… and i am not a big fan of their salads. so i think i need one cheat meal for my 7 days of smoothies / salads. i’ve been good thus far… 😉 so forgive me in advance for my cheat night! i’ll keep it as healthy as i can.
