life got really busy. i’m totally NOT complaining. photography work is coming in and i couldn’t be happier. i’m really hoping i can either find a new job by the new year (with benefits) and/or just live off of my photography income. that would be totally sweet! so needless to say with my crazy hectic schedule i really haven’t been cooking lately at all. like a tofu scramble here and there. lots of chickpea salad. and enough sushi veggie rolls to feed an army. ((they are free while i’m working and that is basically all i can eat at my job)) lots and lots of coffee – which by the way i add cinnamon to every day. love it!
here’s a quick run down of what i’ve been making & eating! 😉
i roasted some cauliflower and made a mock meat sauce to put on the spaghetti. nom nom nom. simple & delicious!
the recipe for the smoothie is posted somewhere on instagram… i’m too lazy to look for it. 😉

my tofu scramble is more veggies than tofu. so it’s a veggie tofu scramble. yum. it was heaven. i added roasted broccoli to it and it was phenomenal. what are your secret ingredients when you make tofu scramble?
well my favorite holiday is this week and i am SOOOOOOOO grateful that my friend kristin is hosting a vegan thanksgiving dinner in her home. so i’ll be cooking up a variety of dishes and i am so excited!!!!! what are you cooking for the holidays?
i’ll post a menu and photos of the food from thanksgiving after next week. i’ll be super busy all week preparing for this feast. can.not.wait. did i mention thanksgiving is my FAVORITE holiday? actually the only holiday i celebrate. it’s all about food! and being thankful.
