for a few weeks i was behaving and sticking to a gluten free / wheat free vegan diet and all was well. until i went to darbster and had the fried mac & cheese and the black & blue burger (yes it’s vegan but it’s on a bun). i was hurting for a few days after. my IBS is back and it’s not playing around. for the past 7+ years my vegan diet has quieted the symptoms of my stomach ailments. but now they are resurfacing. i really did not want to jump on this gluten free bandwagon, but the more i research (currently reading wheat belly) the more i’m starting to wonder if wheat is the culprit.
i know i do a lot wrong with my diet. i indulge too often in sweets and comfort foods. i often skip breakfast and have one meal right before walking in to work. i don’t eat a well balanced diet. i know the changes i need to make and the first step is to actually go grocery shopping! and make more time to cook. (it’s not easy living in someone else’s home and working in THEIR kitchen)
since i just got the new oh she glows cookbook (yayyyyyy finally!) i decided to try a few recipes because angela tends to make most dishes gluten free.
i didn’t end up having time to make dinner last night so i opted for a healthy snack instead. these rice cakes are vegan & gf and delicious. i love them. i smothered them in peanut butter and added coconut flakes & sliced strawberries. so yum. great snack for my commute to work on the weekends!
this morning was a glorious morning. i had BREAKFAST! what a mood improver and i haven’t even finished my liquid happiness (coffee) yet! breakfast is a good thing and i need to remember not to skip it.
last night i made the granola (enough for the week really!) it is freaking delicious! and i don’t have to worry about honey if i make it myself! this granola recipe uses coconut oil & maple syrup (instead of honey). i used GF rolled oats and almond meal. the granola is outstanding. i might make this on a weekly basis!
i have tried overnight oats before (rolled oats, banana, almond milk & chia seeds) but didn’t care for the texture. adding the fruit and granola really helps. i’ve never been a huge chia seed fan (cue 80’s chia pet commercial) but i think it’s growing on me. ha.
once the granola is made… and the chia concoction has soaked overnight in the fridge… this is a really super easy breakfast to make. super healthy. super yum. i recommend to everyone! 🙂 if you’re interested in a healthy cookbook you should definitely check out the oh she glows blog and cookbook! you can thank me later. 😉
