day 08

13 more days to go. my cravings have not stopped. i barely ate today because all i want is junk food.


{spinach, 1/2 mango, 1/2 frozen nana, frozen grapes, pineapple, strawberry, almond milk and hemp hearts} 03/30 green smoothie challenge!


leftovers for lunch today. in work mode trying to make some headway on my editing queue. warmed some lentil soup and topped with 1/2 an avocado.

had a few dried apricots for a snack.

drank some infused water {strawberry, lime, ginger}

i strayed way off the meal plan for dinner. i’m trying to clean out my fridge to make room for next weeks ingredients. i roasted some beets, carrots, broccoli and chickpeas – all with olive oil and various spices. cumin for the carrots, chili powder & oregano for the chickpeas. heated the remaining quinoa that was leftover from the week. added some kimchi, sauteed spinach and added some tahini with lemon juice as a dressing. yum! kinda macrobiotic-ish i think. i guess they steam instead of roasting, but i prefer roasted veggies.  

  tomorrow will probably be super boring. i foresee a green smoothie for breakfast and leftover soup for lunch and dinner. boringggggg. but it’s all i’ve got. hopefully i’ll get to grocery shopping on sunday morning before my afternoon session. can’t wait to try new items on the meal plan for week two.
