Day 13

last night i soaked some chia seeds in coconut milk….
and this morning i made this beauty!
chia parfait layered with blueberries, strawberries, mango and coconut trail mix!
it was goooooooooooood!

 amazing breakfast for sure!

for a snack a few hours later i made some guacamole with crudités. i chose cucumber and organic baby carrots. delish. i could eat guacamole all day long.

 most days i’m infusing fruit in my water jug. today’s blend is cucumber and navel oranges. yummmmm!  my late lunch consisted of leftover carrot ginger soup. i was busy working as you can see. editing all day long!

finally! i get the tacos i’ve been craving for weeks. well kind of. cashew cream (could have blended some more), salsa and walnut “meat”. pretty tasty. i think the salsa made them outstanding. next time i make them i’ll use collard greens or chard. not really into the cabbage shells.    no tacos for you pug.
 for dessert i had my green smoothie. after the parfait this morning i just wasn’t feeling the smoothie. so i saved it for dessert. today’s smoothie 08/30 for the green smoothie challenge on ig / simple green smoothies: {spinach, 1/2 mango, 1/2 frozen banana, frozen pineapple, 1 green apple, hemp seeds, almond milk}
